Hot Italian Sausage, Cheese Tortellini & Spinach Soup

I just love the start of fall and introducing a new hearty soup. It’s soul food. Try this recipe with a cornbread chili muffin. You can easily adapt for vegan or vegetarian switching the sausage and tortellini.

The Recipe

1 cup of onion diced
2/3 cloves of garlic minced
900 mL of broth of choice
1 cup of dry red wine
540 mL can of petite cut stewed tomatoes
1 Tbsp of dried basil
1 Tbsp of fresh oregano
1 large carrot sliced
1 green/red pepper diced
1 cup of tomato sauce (leftover pasta sauce works great)
¾ cup of tortellini of choice
2 cups of Spinach

Cut Italian Sausage in pieces and brown in pot. Remove and brown onions and garlic until translucent 7 minutes in pan drippings. Add beef broth, tomatoes, red wine, tomato sauce, carrot, pepper, basil, oregano and simmer until vegetables are tender about 20 minutes. Before serving add tortellini to hot soup and gently boil for 6 – 8 minutes. Toss in Spinach at the last minute and serve with a hot cornbread chili muffin. It’s a soup of sustenance great for a family supper. Freeze in individual lunch servings and get a start on the week.
